A Symposium Connecting Water, Japanese Cuisine, and Sustainability<\/em><\/strong><\/p>\n\n\n\n

MIZUNOMIZU Co., Ltd. (Head Office: Shizuoka \/ CEO: Tsuyoshi Kodera) will host an English session titled \u201cFuji-no-Mizu: The Water and Food of Shizuoka\u201d<\/strong> at the WASHOKU EXHIBITION SHIZUOKA 2025<\/em> to be held in Shimizu, Shizuoka City on November 3rd, 2025.<\/p>\n\n\n\n

This special event is part of a nationwide exhibition series dedicated to sharing the appeal of \u201cWashoku (Japanese cuisine)\u201d. The symposium will explore how water influences Japanese culinary culture and how its value connects to sustainability and regional revitalization.<\/p>\n\n\n\n

The session will be conducted in English by Tsuyoshi Kodera, CEO of MIZUNOMIZU Co., Ltd. and representative of the Fujinoshimizu Research Group<\/em>, under the theme:<\/p>\n\n\n\n

\u201cThe Relationship Between Water and Washoku.\u201d<\/em><\/p>\n\n\n\n

The lecture will discuss the characteristics of Shizuoka\u2019s water, the differences in hardness and mineral balance, and how these affect dashi, tea, and sake \u2014 the very essence of Japanese cuisine.<\/p>\n\n\n\n

Beyond a tasting session, the event aims to raise awareness of Japan\u2019s water environment and the need to preserve its natural sources for future generations.<\/p>\n\n\n\n

In collaboration with industry, government, academia, and local communities, the symposium will feature prestigious Japanese brands that embody the spirit of omotenashi (hospitality):<\/p>\n\n\n\n
